CHICKEN RICE

Easter celebrations are usually holidays for many people, so they are usually family meals. One way to prepare a good dish for the whole family and not go crazy trying, is a good chicken rice that, in addition to being delicious and very tasty, can be made easily.

RICE WITH SQUID

We can also choose to make a delicious rice with baby squid, very traditional in the southern regions and which comes in handy during Holy Week in which many, especially the most faithful, avoid eating meat or in fact fast (eating a one large meal per day).

LENTILS WITH RICE

Stews are also one of the traditional foods when Easter arrives and one of the best dishes you can make these days is lentils with rice, which are also quite appropriate even in the month of March or April when Easter is usually celebrated. Children will be delighted with these lentils, which are also perfect as a first course.

In the recipe for lentils with rice that we leave you, chorizo is used as one of the ingredients, but since it is Easter, you may not want to put any pork. Therefore, you can make this dish without the chorizo and adding a little more vegetables and paprika for flavor.

On these dates I always return home so, in the north, we always end up eating a good Galician octopus but I have spoken with colleagues from other areas and I think that there is not much in common.

But hey, in case you dare, in case you want to have the perfect excuse to enjoy an authentic dish from the sea, we have chosen this recipe for Galician octopus.

As you can see, the presentation is different but the taste is even more impressive because there is a surprise inside the potato coulant.

RECIPES WITH COD

Cod is another of the typical fish of Holy Week, both for its versatility in the kitchen and for the price it usually reaches.

This can be a great fish to make for dinner and enjoy a light fish. Of course, my personal recommendation is that you do not eat octopus during dinner, that is, do not change the order of the dishes, since it is much more indigestible.

COD AND PEPPER OMELETTE

Although in the link that we leave you you have many options to cook cod this Easter, we also want to offer you a recipe that seems essential in Lent, ideal above all for a Good Friday dinner: the cod and pepper omelette.

Ingredients

  • 300 grams desalted cod
  • 4 eggs
  • 1 red bell pepper
  • 1 green bell pepper
  • ½ onion
  • Olive oil

HOW TO PREPARE THE COD AND PEPPER OMELETTE

Making an omelette is very simple and it will also be with this cod one. If we have the desalted cod it will be better (if not, you must desalt it and for this you will have to put it in water for 48 hours, changing the water every six hours) and we will only have to prepare the vegetables.

We start by peeling the onion and chopping it together with the peppers. Take a frying pan and fry all ingredients with olive oil over low heat.

Once it begins to poach, it is removed from the fire. Beat the eggs and add the cod.

We also add the well-drained onion and pepper and mix everything well (you can add a pinch of salt but with the cod as one of the main ingredients it is not necessary). In a frying pan with a few drops of hot oil, pour this mixture.

It is cooked over medium heat for a few seconds and we keep it until we can turn it over so that it is well cooked on both sides.
